Baja Shrimp Tacos Recipe:

From Mexican Monday to Taco Tuesday, we love a good taco around here! This recipe for baja shrimp tacos has just enough heat to make these amazing but not so much that the kids can’t enjoy them.

They have the perfect blend of spices and seriously take just minutes to prepare. Enjoy these during busy weeknights and eliminate the stress of dinner time. This is quick and easy meal idea.

We would rather eat out because we want to and not because we forgot to plan for dinner. This is one of those meals that can easily be prepared even when you are running from work to school and endless activities.

What are Baja Shrimp?

Baja Shrimp are always a family favorite. They have a light crunch, savory flavor, and hint of spice. This easy shrimp taco recipe is cooked in a skillet with simple seasoning and the layered in a corn tortilla and topped with a cabbage mixture.

We love making Baja Shrimp for an easy weeknight meal or hanging with my girlfriends. They are light and healthy and only require a few ingredients to make.

Ingredients needed - olive oil, precooked shrimp, salt and pepper, garlic, paprika, oregano, lime, corn tortilla, red cabbage, jalapeno, cilantro cojita cheese

Ingredients:

  • Olive Oil
  • Frozen Precooked Shrimp (peeled and deveined)
  • Salt and Pepper
  • Minced Garlic
  • Paprika
  • Oregano
  • Lime
  • Corn Tortillas
  • Red Cabbage
  • Jalapeno
  • Cilantro
  • Cojita Cheese

How to Make Baja Shrimp Tacos:

  • Step 1 – Sauté the shrimp in olive oil and all of the seasonings. This will only take a few minutes.

  • Step 2 – Squeeze the lime over top the shrimp once it is finished cooking. This is my favorite part!
  • Step 3 – Spoon the shrimp into the tortillas and top with the shredded cabbage, jalapenos, cilantro and cojita cheese.

How Long to Cook Shrimp:

When we make Baja Shrimp, we get the precooked shrimp in the freezer section. You can easily buy it at the meat counter if you prefer. We like to use precooked shrimp for this recipe, but you can buy uncooked shrimp.

When purchasing the precooked shrimp we get the shrimp that has been peeled and deveined. After placing the shrimp in the skillet, all that you are doing is heating the shrimp, so it only takes about about 3 minutes to cook.

If you buy uncooked shrimp, then you will need to cook the shrimp a little longer.

Baja Shrimp Tacos Calories are Minimum:

If you are trying to eat healthy and reduce calories, these shrimp tacos are a great recipe to try. Shrimp is low in calories making this meal healthy and delicious.

Just be mindful of the toppings you add because that can add extra calories.

Recipe Tips:

  • Shrimp – Use precooked shrimp that has been peeled and deveined for an easy weeknight meal.
  • Cooking Shrimp – It only takes a few minutes to cook shrimp. We recommend only heating shrimp up for a few minutes so the shrimp doesn’t dry out.
  • Seasoning – We used simple seasoning but you can easily use what you have.

Baja Shrimp Taco Recipe Variations:

  • Raw Shrimp – You can use raw shrimp in this recipe. You will need to adjust your cooking time. Cook shrimp until it is pink.
  • Shrimp Taco Sauce – Make a shrimp baja sauce with Greek Yogurt or sour cream for a sauce to add flavor to your tacos. Chipotle Mayo is also a good addition.
  • Coleslaw Mix – We shredded cabbage in this recipe, but you can easily use Coleslaw Mix to add to the top of the shrimp tacos.
  • Taco Seasoning – Use taco seasoning instead of the individual seasoning to add to the shrimp. You can make your own taco seasoning or use a packet.
  • Chili Powder – If you prefer a little bit of spice to this mixture, add in chili powder or red pepper flakes.
  • Lime Juice – Our favorite part is squeezing lime juice over the shrimp tacos for added flavor.
  • Tortillas – We used corn tortillas but you can easily use flour tortillas.

How to Store and Reheat:

If you have leftover Baja Shrimp mixture, place in an air tight container to enjoy another day. This shrimp mixture will stay fresh for about 3 to 5 days.

When you are ready to reheat, place the leftover shrimp on a baking sheet and reheat. Place in the preheated oven at 350 degrees and reheat for about 15 minutes.

You can microwave the shrimp but we find that it doesn’t have the same texture.

Easy Baja Shrimp Tacos:

Ingredients

  • 2 tablespoons olive oil
  • 1 lb medium frozen precooked shrimp peeled and devained
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon paprika
  • 1/4 teaspoon oregano
  • 1 lime freshly juiced
  • 12 corn tortillas
  • 1 red cabbage shredded
  • 1 jalapeno sliced
  • 1/4 cup cilantro chopped
  • 1/2 cup cojita cheese

Instructions

  • In a large skillet saute the shrimp in the olive oil. Season with all of the seasonings. Cook over medium hight heat for 3-5 minutes until the shrimp is pink.
  • Squeeze one lime on top.
  • Then spoon the shrimp onto the tortillas and top with shredded cabbage, jalapenos, cilantro and cojita cheese.
  • Serve with your favorite taco sides and enjoy!

  2. Wow! This recipe was great. Very fresh tasting, cool but spicy. It sure was a crowd pleaser and easy to make. I made some with shrimp, chicken and chorizo, since not everybody likes shrimp. I made lime cilantro rice for a side. Definitely would make again. Thanks.
