As a mom of 8 kids, I make a lot of slow cooker chicken recipes. The chicken always cooks tender and with tons of flavor. This chicken and broccoli recipe is always a family favorite because of how easy it is to make.

Ingredients 

Ingredients for chicken and broccoli - chicken breasts, broccoli florets, cornstarch, water, sesame seeds, green onions
  • Skinless Chicken breasts – Substitute with chicken thighs or chicken tenders
  • Fresh Broccoli Florets – Cut in about the same size pieces. You can use frozen broccoli, but it may turn out with a mushy texture.
  • Cornstarch and Cold Water – Cornstarch Slurry helps to thicken the sauce
  • Sesame Seeds and Stalks Green Onions – Optional topping

Ingredients for the sauce - water, soy sauce, brown sugar, rice vinegar, cornstarch, garlic, ginger, red pepper flakes, sesame oil

How to Make Chicken and Broccoli in Crockpot

Combining the sauce in the bowl

Step 1 – Whisk together the sauce ingredients in a medium size mixing bowl.

Step 2 – Place the chicken breasts in a crock pot and pour the sauce on top. Cover and cook on low for 3-4 hours.

Step 3 – In a small bowl, stir together the cornstarch and cold water.  Stir this mixture into the crock pot and add in the broccoli florets.

Step 4 – Cover and cook on high for 30-40 minutes until the broccoli and chicken are cooked through (internal temperature of 165 degrees Fahrenheit).

Step 5 – Remove the chicken and roughly shred it into bite size pieces.  Stir the chicken and broccoli into the sauce in the crock pot.

Step 6 – Serve over rice topped with the sesame seeds and green onions.  Enjoy!

Refrigerate any leftovers in an airtight container for up to 5-6 days.

Recipe Tips

  • Chicken – We try to cook chicken that is about the same size. This helps to cook evenly and about the same time.
  • Shredding Chicken – To easily shred the chicken, learn how to shred chicken with a mixer to save time.
  • Adding in Broccoli – Add in the broccoli towards the end of cooking time as it doesn’t take as long to cook as the chicken. This will also prevent it from being soggy.

Variations Ideas

  • Change Chicken – We used chicken breast in this recipe but you can also use boneless skinless chicken thighs or chicken tenders
  • Seasoning – Feel free to change the seasoning to what you prefer. I usually start with about ¼ teaspoon and then add more if needed. Here are some delicious additions – black pepper, kosher salt, or cayenne pepper.
  • Sauce – Substitute the brown sugar for honey or maple syrup.
