Crock Pot Fiesta Chicken Recipe:

This simple and delicious chicken mixture is one of our favorite dinner ideas around here. It is so easy and so versatile.

You only need a few ingredients and your crockpot does all the work. The beans and corn combined with the chicken and cream cheese make an amazing mixture to serve over rice, in tacos and more!

This chicken mixture is packed with flavor and SO good no matter how you decide to eat it. We love to mix things up and try different ways of serving it to keep things interesting.

My kids think I am fixing a new recipe when really it is the same thing. That is why we love slow cooker meals.

How to serve Fiesta Chicken:

There are so many different options when serving this Fiesta Chicken. I like to give my kids options by fixing a side of rice or have tortilla’s out so they can eat it how they want.

We love to serve Slow Cooker Fiesta Chicken and Rice!

This chicken is amazing however you serve it. However, one of our favorites is to eat the chicken over rice. It is great over white rice or brown rice.

Learn how to freeze rice and it will save you so much time. We are all for quick and easy to help us during the week.

Slow Cooker fiesta chicken is also really tasty served over Cilantro lime rice. This is such an easy and delicious dinner.

What type of toppings are good with Chicken Fiesta?

I have a large family and there is always an activity we are running back and forth to. This recipe allows us to come home to a delicious dinner waiting that everyone enjoys.

Notes – you can top with shredded cheese and avocados!

Let’s make Crockpot Fiesta Ranch Chicken!

Make sure you have a good crock pot. If you don’t have one or need a new one, here are some nice ones on sale.

If you work all day, you may want to invest in a programmable crockpot. They are awesome because you can set them to start later, or to stop and switch to warm once the dinners are ready.

Ingredients needed for Fiesta Chicken - chicken breast, ranch seasoning mix, chicken broth, taco seasoning, black beans, rotel, corn, cream cheese, limes

Ingredients for Crock Pot Fiesta Chicken:

  • Chicken Breasts
  • Ranch Seasoning Mix
  • Chicken Broth
  • Taco Seasoning
  • Black Beans
  • Rotel
  • Corn
  • Cream Cheese
  • Limes

How to make Fiesta Chicken in the Crock Pot:

  • Add the chicken and place all the ingredients except the cream cheese and limes in the crock pot. We drain and rinse the black beans before adding to the crock pot.
  • Cover and cook on high in the slow cooker for 3-4 hours or low for 6 hours.
  • Shred the chicken.

  • Squeeze the limes over the chicken mixture, add cream cheese and stir to combine.
  • Continue to cook in the crock pot until the cream cheese is fully melted (usually 30-60 minutes).
  • Serve over rice or with tortillas.

Variation Ideas:

We love recipes that can changed to ingredients we already have. This is one of those recipes.

  • Use Chicken Tenderloins – If you don’t have any chicken breast, this recipes works great with tenderloins. You can also use Chicken Thighs. You can also use frozen chicken breast. Majority of my recipes always start with frozen chicken.
  • Add some more heat – If you like you Fiesta Chicken with a little more kick, stir in some finely chopped jalapeno peppers. You can also sprinkle in some red pepper flakes.
  • Change the Beans – If you don’t have any black beans, use pinto beans or red kidney beans.
  • Use Instant Pot – You can use your instant pot to make Instant Pot Fiesta Lime Chicken.

How long to cook chicken in the Crock Pot?

  • After putting chicken and ingredients in the crock pot, place lid on.
  • Cook Chicken in the slow cooker on high 4 hours or low for 6 hours.

Can I make it spicy?

Sometimes we add green chilis or bell peppers to the recipe. You can also add a can of diced tomatoes if you prefer more tomato flavor. I like to let the mixture sit 30 minutes to absorb any liquid.

Notes – you can top with shredded cheese and avocados!

How to make it less spicy:

  • The can of Rotel that is added can be a little spicy. Make sure you are using the original flavor.
  • Instead of Rotel, you can use a jar of mild salsa.
  • Add in additional diced tomatoes instead of the Rotel.

Can I make this low fat?

  • You can leave out the cream cheese.
  • Top the soup with fat-free or low fat sour cream.
  • Carb free tortillas are a good options as well as serving as a salad.

Tip to shred chicken for Crock Pot Fiesta Lime Chicken:

I use a hand mixer to shred the chicken faster. It is so easy and one of my best time saving kitchen tips!

If you are not shredding your chicken this way, you are missing out. It can be done in a fraction of the time by doing it by hand.

  • 1 packet ranch seasoning mix
  • 2 Tbsp Taco Seasoning
  • 1 can black beans 15 0z
  • 1 can Rotel 8 oz
  • 1 can corn 15.25 oz not drained

Instructions

  • Add the chicken and place all the ingredients except the limes and the cream cheese in the crock pot.
  • Cover and cook on high in the slow cooker for 3-4 hours or low for 6-8 hours.
  • Shred the chicken.

    I made this, totally missed the taco seasoning, oops. It was really good anyway. I will definitely make a again and use the taco seasoning. Lol! I did only use 4oz of cream cheese and 4 oz of quesadilla cheese from Walmart. Served over rice it was a hit with the adults.

    I made this recipe about a month ago for the first time and have made it four times since. It is absolutely delicious! You can use tortillas, bread, crackers, plain or many many other things. It also makes a big pan so it will last for two or three days depending on the size of your family.pGreat recipe!

    I make this recipe at least twice a month. It’s one of my family’s favorite dish! So easy to make and so delicious. My husband uses lime tortilla chips with it or rolls it up in a soft tortilla. I like it with some white rice. Soooo tasty!!

    I mix 1/2 a packet of taco seasoning with a 1/2 a packet of the Ranch seasoning packet and that is a good substitute if you can’t find the fiesta packet in your area. Let me know how it turns out!

    Would love that copy cat recipe for the fiesta ranch dip as well. All the stores I have checked are all out. (Covid? Everything else has been hoarded- Lol) The sticker is there with the price but nothing on the shelf. Purchased a regular ranch dip but am wondering what other spices to add to give it that kick.     Can I make it without a crockpot. Boil the chicken and then add the in the ingredients? Do you think it would work. I am gone daily longer than 6 hrs and don’t want to put in in the crock pot on low for 9 to 10 hrs. Afraid it will dry out.

    Nathan – Sorry about that confusion! I mix the cream cheese into the recipe after the cook time and the chicken as been shredded. Then I cook it until it’s completely melted. I will update the recipe and the post. Thank you!

    I have made this twice, it was a big hit with the family. Some didn’t like the creamy taste of it however. Your pic of the chicken does not look like it has a creamy consistency, like mine. Ever made it without the cream cheese or with a substitute for it?

    I remove the chicken only from the crock pot and shred it away from the other ingredients. I usually put it in a separate bowl and use a hand mixer to shred the chicken. Then I stir the shredded chicken back in with the other ingredients in the crock pot. Thank you.

    This recipe is delicious!! I made it for my baby gender reveal party and it was a hit! It was hassle free, frugal and the best part is my crockpot did all the work so I had time to decorate! Mine turned out runny as well but after making it twice I believe it’s based on the chicken you’re using. The chicken I purchased both times was pumped up so much of water?.. who knows what. I believe that’s what’s affecting the extra liquid. Just had to drain some toward the end. Still tastes amazing!!

    I haven’t tried it with a crock pot liner. I usually don’t need them in my ninja crock pot. I would probably move the chicken to a mixing bowl so you don’t tear the crock pot liner into your recipe. Thank you .

    Ashley – Each batch will vary as the chicken will provide some liquid to it as well and this amount will vary depending on your chicken size, type etc. If it’s too runny, I mix some cornstarch with cold water and then add that to the crockpot for the last 30 minutes on high. This will help thicken the entire recipe. I hope you enjoy it! This is one of my go to favorites 🙂
