Greek yogurt pancakes

These fluffy Greek yogurt pancakes aren’t your standard pancakes. In fact, even my pickiest eater said this recipe was the best pancakes he had eaten. That is pretty amazing!

With back to school on the horizon, I am looking for ways to jazz up breakfast and even make it easier. Not only does school start, but then all the after school activities begin and life begins to get a bit hectic.

We headed to our local Target to pick up some of our favorite yogurts. Yogurt has become a fridge staple in our family. From breakfast, to lunches, to an after school snack our family enjoys yogurt anytime of day.

We grabbed our favorite Dannon Light & Fit Vanilla Greek yogurt. We love eating this plain or with granola, but we bought some knowing  it would help me make amazing pancakes!

Let’s make some pancakes with greek yogurt!

How to make Greek yogurt pancakes:

  • First, you need a large mixing bowl. Add the eggs and milk and whisk together.
  • Second, add the Greek yogurt. Whisk until everything is combined well and you don’t see any lumps.
  • Next, get out a separate bowl. Add the baking powder with the flour. Then pour into the wet ingredients.
  • Make sure everything is mixed together really good. If the batter is too thick then add in milk by one tablespoon at a time until it gets to the consistency you prefer.

  • Get your griddle or pan ready. Add the butter and melt to coat the pan. You can also use coconut oil.
  • Start making the pancakes by pouring ¼ cup of the batter onto the pan.
  • Let the pancakes cook for about 2 min until golden brown and bubbles form. Then flip and cook another 2 minutes.

How to freeze pancakes

The trick to a quick morning is making triple or quadruple patches of pancakes. Then freezing them. That way during the week in the mornings all you have to do is heat up a pancake and breakfast is done!

  • Make pancakes according to directions.
  • Allow the pancakes to cool completely.
  • Place the pancakes on a cookie sheet in a single layer and freeze until frozen solid.
  • Place the frozen pancakes in a gallon size freezer bags and in the freezer until ready to use.

When you are ready to eat simply place 1-3 pancakes straight from the freezer on a microwave safe plate and microwave in 30 second intervals until heated through.

Top with your favorite toppings and you have delicious pancakes ready in minutes with a mess free kitchen. That is a win-win for a school morning!

Topping ideas

  • Serve with fresh fruit, powdered sugar, or warm syrup and enjoy!

I personally loved topping my Greek yogurt pancakes with warm maple syrup and fresh raspberries!

These greek yogurt pancakes are amazing! They are fluffy, packed with flavor, and have that delicious vanilla flavor thanks to the yogurt.

Variations to try:

Now this is one easy recipe that you can make several ways. Try a few of these variations to make your own special greek yogurt pancakes:

  • add in frozen blueberries
  • substitute different flavor or Light & Fit Greek yogurt
  • add in ¼ cup of chocolate chips
  • top with pecans, warm butter, and syrup
  • Mix in ⅛ cup of peanut butter
  • Use plain Greek yogurt instead of flavored.

You can even substitute one container of greek yogurt for a container of Dannon Activia. It is also a family favorite. Personally I loved the Strawberry Activia in the pancakes.

  1. It just depends on how big you make your pancakes. The entire recipe serves 4 when I made this, my batter made 8 pancakes so each serving would be 2 pancakes. Thanks!

    I will add some vanilla next time. My daughter who ate them with chocolate chips liked them. My other daughter did not and they could use some sweetness in my opinion.
