When I think about an easy Mexican meal, Sheet Pan Chicken Fajitas instantly comes to mind. Everything is in one pan for a great meal and dinner is just so easy.

The seasoning makes each bite so flavorful and the veggies combine with the chicken to make each bite so delicious.

How do you cut chicken breast for fajitas?

Slice the chicken into 1/2-inch thick strips. You might need to slice extra wide strips in half.

Ingredient for healthy sheet pan chicken fajitas:

  • 2 lbs boneless skinless chicken breasts sliced into 1/2-inch thick strips (slice extra wide strips in half)
  • 3 Bell Peppers  (I used  red, green and yellow bell peppers), cored and sliced into strips
  • 1 medium yellow onion halved and sliced from top to root
  • 2 tsp minced garlic
  • 3 Tbsp olive oil
  • 2 fresh limes juiced
  • 3 Tbsp chopped cilantro
  • 12-15 Small Flour Tortillas 
  • Fajita Toppings: sour cream, pico, shredded cheese, etc. 
  • For the Seasoning: 
  • 1 Tablespoon Chili Powder 
  • 1 teaspoon Paprika 
  • 2 teaspoons Cumin 
  • ½ teaspoon Onion Powder 
  • ½ teaspoon Garlic Powder 
  • ¼ teaspoon Dried Oregano 
  • 1 teaspoon Salt 
  • ½ teaspoon Pepper 
  • ¼ teaspoon Cayenne Pepper (optional) 

How do you make sheet pan chicken fajitas recipe:

Preheat the oven to 400°F (200°C). Spray a large sheet pan with non-stick cooking spray or cover with foil. 

Place chicken strips in a large bowl. Top with the seasonings and minced garlic. Toss to coat the chicken with the seasoning.

Drizzle olive oil over top. Toss everything to evenly coat. Spread into an even layer working to keep chicken from overlapping.

Bake for 18-25 minutes, tossing once halfway through cooking time until the chicken is cooked through and the veggies are tender. 

Wrap tortillas tightly in foil and warm in the oven during the last 5 minutes of the cooking time.

What goes with fajitas?

Instructions

  • Preheat the oven to 400°F (200°C). Spray a 17 by 12-inch rimmed baking sheet with non-stick cooking spray or cover it with foil.
  • Place 2 lbs boneless skinless chicken breasts sliced into 1/2-inch thick strips in a large bowl. Add 2 tablespoons fajita seasoning and 2 teaspoons minced garlic and toss to coat. Spread the seasoned chicken onto the prepared baking sheet.
  • Add 1 red bell pepper, 1 green bell pepper, and 1 yellow bell pepper that have been cored and sliced into strips, along with 1 medium yellow onion halved and sliced from top to root, onto the baking sheet.
  • Drizzle 3 tablespoons olive oil over the chicken and vegetables. Sprinkle with 1 teaspoon salt and toss everything to evenly coat. Spread into an even layer, working to keep the chicken from overlapping.
  • Roast in the preheated oven, tossing once halfway through cooking, until the vegetables are tender and the chicken is cooked through, about 18–25 minutes.
  • Wrap tortillas tightly in foil and warm them in the oven during the last 5 minutes of the fajita filling cooking.
  • Drizzle the juice from 2 fresh limes evenly over the cooked chicken and vegetables. Sprinkle with 3 tablespoons chopped cilantro and additional salt to taste, then toss to coat.
  • Serve the filling warm in the warmed tortillas with your desired toppings. Serve with additional lime wedges and fresh cilantro if desired.

    This cooking method worked out really well. I normally use a George Foreman grill for fajitas, but not anymore! I used a fajita marinade recipe rather than fajita spice. Added the garlic and substituted parsley for cilantro. Chicken turned out moist and delicious. I used 2 sheet pans.
