Ingredients

large onion
chopped (I use frozen diced onion)

stalks celery
chopped

carrots
peeled and chopped

medium Yukon gold potatoes
peeled and diced into small pieces

cans of fire roasted tomatoes

bag frozen mixed vegetables

bay leaves

dried thyme

Instructions
Place everything in the slow cooker. I used a 6 quart crock pot.
Cook on low for 6 hours or until potatoes are soft. (You can cook on high but reduce time.)
Salt and pepper to taste.
