Ingredients

flour

salt

baking soda

teaspoon
baking powder

cinnamon

ground nutmeg

unsalted butter
(melted)

granulated sugar

cup
brown sugar

teaspoons
vanilla

cups
grated zucchini
Instructions
Preheat oven to 325 F (165 C). Generously grease loaf pan.
Combine dry ingredients (flour through cinnamon). Set aside.
In a large bowl, beat eggs, butter, sugars, and vanilla.
Slowly add flour mixture to the large bowl, beating as you go.
Add zucchini and beat again until thoroughly mixed.
Pour the batter into your greased loaf pan. Bake at 325 F for 60-65 minutes until a toothpick inserted into the middle of the bread comes out clean.
Let cool on a wire rack for 10 minutes, then slice and enjoy!
Notes
Store any leftover bread at room temperature in an airtight container for up to 1 week.
