Ingredients

Instructions
Combine everything but the chicken in a food processor or blender. Blend until smooth.
Place the chicken and the sauce in the crock pot.
Cook on low for 8-10 hours or until chicken is tender.
To serve, spoon rice into bowls.
Top with chicken, avocado, cilantro, tomato, onion, and any other favorite toppings.
