Ingredients

boneless skinless chicken breasts
diced

14.5-ounce can diced tomatoes

low-sodium chicken broth
plus more as needed

tablespoon
taco seasoning

salt

15-ounce can black beans, drained and rinsed

frozen corn kernels

cooked brown rice

fresh limes

cheddar cheese
shredded
Optional toppings: shredded cheese
chopped cilantro, sour cream, diced avocado, salsa, hot sauce, diced green onions, shredded lettuce
Instructions
Combine the chicken, diced tomatoes and their juices, chicken broth, taco seasoning, black beans, corn, and salt in a slow cooker.
Cover and cook on the LOW setting for 8 hours.
Head up the brown rice and stir in the crock pot.
Squeeze the fresh limes over on top.
Spoon into bowls.
Top with cheese, avocado, pico, cilantro, and any other toppings you would like.
