Remove the steaks from your refrigerator 45-60 minutes prior to grilling to allow them to come to room temperature.
Season both sides of the steaks with Kosher salt and fresh cracked black pepper.
Heat grill to 400 degrees F.
Spray or wipe oil onto the grill grates.
Place steaks on a hot grill and cook for 3 to 5 minutes depending on your Steak Doneness preference.
Flip the steak over and grill for an additional 3 to 5 minutes until steak is cooked to your preference.
Remove from the grill, top with butter, and allow to rest a minimum of 5 minutes before cutting or serving.
Notes
The best way to test for doneness is by inserting an instant read thermometer into the thickest part of the steak. Do this through the side, not the top of the steak.
Steak Doneness
Rare - 120F, cool to warm red center
Medium Rare - 130F, Warm red center
Medium - 140F, Hot pink center
Medium Well - 150F, Mostly brown center
Well Done - 160F, full brown in color
