Preheat the oven to 350 degrees Fahrenheit and line an 8X8 baking dish with parchment paper. Spray the parchment paper with a non-stick cooking spray.
Place half of the chocolate chips in a large microwave safe bowl. Microwave in 30 second intervals, stirring after each interval, until the chocolate chips are melted. Set aside and let it cool for a few minutes.
In a separate bowl, whisk together the flour, cocoa powder, erythritol, baking powder and salt.
Then whisk the greek yogurt, egg, vanilla extract and milk into the bowl with the melted chocolate (that has cooled slightly).
Stir the flour mixture into the greek yogurt mixture and stir until just combined.
Stir in the remaining chocolate chips.
Pour the batter into the prepared baking dish.
Bake for 20-23 minutes until a toothpick inserted into the center of the brownies comes out clean.
Cool the brownies on a wire rack for 20-30 minutes and then they are ready to slice, serve and enjoy!
Notes
Store the leftover brownies in an airtight container or bag at room temperature for up to 4-5 days.
