Start with a large serving platter. We used a circle serving platter but you can easily use a rectangle platter as well.
Cut out the turkey body (oval) and head (circle) out of the cheddar cheese and cut a small triangle out of the Swiss cheese for the beak.
Then assemble the tray. Start with the outside row of the turkey feathers. Arrange the crackers in a large half circle around the outer edge of the serving platter.
Then arrange the cheddar cheese slices next to the crackers, overlapping them on top of the crackers. Then follow this same process with the salami slices, Swiss cheese slices and then the pepperoni slices. Make sure that the pepperoni slices fill in the rest of the space.
Place the turkey body and head in the center of the pepperoni and top the head with the Swiss cheese beak and chocolate chip for the eyes.
Notes
This platter is best served fresh so that the cheeses and meats don't dry out. If you do make the platter ahead of time, make sure to cover it tightly with plastic wrap and refrigerate it until ready to serve.
