Easy Turkey Pot Pie is a classic recipe that is made with your leftover turkey. This easy, delicious and hearty pot pie is made with simple ingredients.
Preheat the oven to 425 degrees F and line a 9 inch pie pan with one of the premade pie crusts.
Melt the butter in a large skillet over medium high heat. Add the chopped onion and sauté until the onions are cooked and translucent.
Then stir in the cream of chicken soup and the milk until combined. Heat until the mixture is heated through.
Then stir in the frozen mixed vegetables, the cooked shredded turkey and the seasonings. Heat for 3-5 minutes until the veggies are tender and the turkey is heated through.
Then pour the turkey and vegetable mixture into the pie pan over the pie crust.
Cover with the remaining pie crust sheet. Pinch the edges to seal and cut a few slits on the top of the pie. Brush the top of the pie with the egg wash (beaten egg).
Bake for 35-40 minutes or until the pie is lightly browned.
Remove the pie from the oven and let it sit for 10-15 minutes.
Then it’s ready to slice, serve and enjoy!
Notes
You can easily use cooked chicken instead of turkey in this recipe. If the pie crust is getting too brown in the oven, loosely cover the pie with foil to keep it from getting browner.
