Instructions
Preheat oven to 450 degrees Fahrenheit. Peel the sweet potatoes and cut into the size of fries (approximately 1/4" inch thick pieces).
In a mixing bowl, toss the potatoes with the corn starch.
Place the potatoes on parchment or foil lined baking sheets. Separate them out as much as possible so that they cook evenly.
Drizzle with the olive oil. Mix the seasonings together in a small bowl and sprinkle over the potatoes.
Bake uncovered for 15-20 minutes (tossing them half way through the cook time) until the potatoes are cooked through and brown slightly.
Gently toss; serve immediately.
