Before you begin, make sure you use a skillet with a lid. This is the key for this recipe in getting your potatoes nice and soft without browning them too much.
In a large skillet, melt butter over medium-low heat. Add diced potatoes. Sprinkle potatoes with garlic salt and oregano. (Adjust the seasonings to your families likings.) Put the lid on the skillet and keep over medium-low heat.
Turn the potatoes every 3-5 minutes, until they reach your desired tenderness. I like them on the softer side, so I let them cook for 15-20 minutes.
Once the potatoes are done the way you like them, remove the skillet from heat and sprinkle with cheese. Put the lid back on and let sit another 5 minutes or so - until the cheese is nice and melted.
Don't forget to try other toppings like Bacon, chives, sour cream or onions!

You can top this potato side dish with bacon, or chives, and even sour cream. You can make them several different ways just by topping them with a different ingredient.
