Ingredients

left over mashed potatoes
2
eggs
1/4
cup
flour

tablespoons
butter just for pan frying
Instructions
Beat the 2 eggs with the flour in a mixing bowl.
Mix with the left over mashed potatoes to combine.
Heat up the electric skillet to 350 degrees. Smear with butter and once melted you know it is ready.
Spoon the mashed potatoes by 1/4 cup on the skillet. Allow it to brown completely.
Then flip and smash the potato cake down so it flattens more and allow it to brown.
Remove and top it with anything- cheese, sour cream, chives or bacon. Anything and it tastes great.
