Chocolate Chip Muffins

Ingredients

  • 2 3/4 cup flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine melted
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 eggs
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 12 ounce package mini chocolate chips
  • coarse sugar optional

Instructions

  • Preheat oven to 375 F. Spray muffin tray or line with liners.
  • Mix together dry ingredients, flour through salt and set aside.
  • Mix melted butter and sugars. Stir until well blended.
  • Add eggs, one at a time. Mix well.
  • Slowly mix it milk and vanilla.
  • Gradually add dry ingredients, stirring only until mixed in (do not over mix).
  • Mix in chocolate chips.
  • Fill muffin cups 3/4 full. Sprinkle with coarse sugar, if using.
  • Bake 15-18 minutes or until lightly golden brown and knife inserted comes out clean.
  • Serve warm.

Notes

If you don't eat all the muffins this recipe makes, remember that they freeze great. Just zap in the microwave when you’re ready to eat them.
