Easy Crock pot Roast Beef with Peppers

Ingredients

roast
about 3 lbs is what I used

green bell pepper sliced
or more if you want
1
onion sliced thick
we slice them thick so the kids can pick them out easily if they want!

can of diced tomatoes with green chilies
rotel

cup
red wine vinegar

water

teaspoon
minced garlic

Teaspoon
cumin

teaspoon
salt

teaspoon
pepper
Instructions
Place the roast in the crockpot.
Add everything else on top.
Cook on low in your crockpot for about 6 to 8 hours.
Shred the beef with 2 forks and stir. Let the flavors combine for about 30 more minutes in the crockpot before you serve.
Serve with tortillas or on rice!
