Ingredients

  • 1/2 white onion
  • 1 tablespoon minced garlic
  • 1 tablespoon adobe sauce from small can of chipotle peppers
  • 1 chipotle peppers from small can of chipotle peppers
  • 1 tablespoon ancho chili powder
  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 2 teaspoons dried oregano
  • 1 fresh lime juiced
  • 3 boneless skinless chicken breasts cut into pieces
  • 6 cups rice cooked
  • optional toppings:
  • 1/4 cup cilantro chopped
  • 1 avocado optional
  • 1 roma tomato diced
  • 1/2 red onion diced

Instructions

  • Combine everything but the chicken in a food processor or blender. Blend until smooth.
  • Place the chicken and the sauce in the crock pot.
  • Cook on low for 8-10 hours or until chicken is tender.
  • To serve, spoon rice into bowls.
  • Top with chicken, avocado, cilantro, tomato, onion, and any other favorite toppings.
