Ingredients

  • 1 1/2 pound chicken breasts (diced into 1 inch pieces)
  • 1 pound Russet Potatoes (peeled and dice into 1 inch pieces)
  • 2 carrots (peeled and diced)
  • 2 tablespoons yellow curry powder
  • 1 can full fat coconut milk (14 oz)
  • 1 fresh lime (juiced)
  • 1 tablespoon minced garlic
  • 1/2 cup chicken broth
  • 1/2 teaspoon ground ginger
  • 2 tablespoon brown sugar
  • 1 teaspoon salt
  • 2 tablespoons cornstarch

Instructions

  • Add all the ingredients to a crock pot. Stir to thoroughly combine all the ingredeitns.
  • Cook on low for 4 -5 hours.
  • Serve as is or over rice and enjoy!

Notes

*Refrigerate the leftovers in an airtight container for up to 5 days.
