  • 1 roast about 3 lbs is what I used
  • 1 green bell pepper sliced or more if you want
  • 1 onion sliced thick we slice them thick so the kids can pick them out easily if they want!
  • 1 can of diced tomatoes with green chilies rotel
  • 1 cup red wine vinegar
  • 2 cups beef broth
  • 1 teaspoon minced garlic
  • 1 Teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper


  • Place the roast in the Instant pot
  • Add everything else on top.
  • Add the lid and set the valve to sealing.
  • Set the pressure (high for 60 minutes). Allow a natural release.
  • Remove the lid.
  • Shred the beef with 2 forks and stir. Let the flavors combine for about 30 more minutes in the crockpot before you serve.
  • Serve alone or on tortillas or rice or cauliflower rice.
  • Enjoy!
