Ingredients

  • 2 large chicken breasts cut into pieces
  • ½ onion chopped
  • 1 cup long grain brown rice do not use any other kind of rice
  • 2 teaspoon minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup sour cream
  • 2 cups chicken broth
  • 16 oz frozen broccoli chopped
  • 1 cup shredded cheddar cheese

Instructions

  • In a 6 quart slow cooker combine the rice, chicken, onion, seasoning, sour cream, and chicken broth. Stir to combine
  • Cover and cook on high for 2.5 hours or until chicken is cooked through and rice has absorbed the liquid.
  • Stir in the frozen broccoli. Cover and cook for another 30 minutes until broccoli is cooked.
  • stir in the cheddar cheese right before serving.
