Tap the chicken dry by dabbing it with a paper towel.
Rub the outside of the chicken with olive oil and then rub on the seasoning mixture onto the outside of the chicken.
Tie the wings of the chicken behind the chicken with kitchen twine.
To Roast in the Oven:
Preheat the oven to 450 degrees F.
Place the whole chicken in a large roasting pan or a cast iron skillet with the breast side facing up.
Cook at 450 degrees F for 12-15 minutes to brown the outside of the skin on the chicken. Then reduce the oven temperature to 350 degrees F and cook for 60-70 minutes until the chicken reaches an internal temperature of 160 degrees F.
Then remove the chicken and let it rest for 10-15 minutes and the chicken should reach an internal temperature of 165 degrees F during this resting time.
Then the chicken is ready to slice and enjoy!
To Cook on a Rotisserie:
Skewer the chicken. Insert the chicken into the rotisserie.
Then cook the chicken based on the rotisserie’s manufacturer’s instructions. This is usually around 18-20 minutes per pound so it would be approximately 60 minutes for a 3 pound chicken.
Once the chicken has reached an internal temperature of 160 degrees F.
Then remove the chicken and let it rest for 10-15 minutes and the chicken should reach an internal temperature of 165 degrees F during this resting time.
