Pineapple Casserole is a popular southern dish. It is loaded with pineapple. cheese, and topped with crushed crackers. It is delicious and easy to make.
Preheat the oven to 350 degrees F and spray either a 9x9 baking dish or a 1 1/2 quart casserole pan with a non-stick cooking spray.
In a large mixing bowl, whisk together the flour and sugar. Then stir in the drained pineapple and the shredded cheddar cheese.
Pour this mixture into the baking dish or casserole pan.
In a separate small mixing bowl, stir together the crushed crackers and melted butter.
Sprinkle this mixture on top of the casserole.
Bake for 35-40 minutes until the casserole is heated through and the top of the casserole is browned.
Serve immediately while warm and enjoy!
Notes
This casserole can easily be a dessert or a side dish. We do not recommend fresh pineapple for this recipe. Refrigerate the leftovers covered for up to 4-5 days. You can easily reheat the leftovers in the oven or the microwave to reheat and enjoy your leftovers.
