Slice the cooled, peeled hard-boiled eggs in half lengthwise. Carefully remove the yolks and place them in a medium bowl.
Mash the yolks with a fork until smooth.
Add the mayonnaise, Dijon mustard, pickle relish, salt, and pepper. Stir until smooth and well combined.
Spoon or pipe the yolk mixture evenly into the egg white halves.
Sprinkle with paprika and top with crumbled bacon and chopped chives.
Refrigerate until ready to serve.
