Slice the cooled hard boiled eggs in half lengthwise. Remove the yolks from the eggs and place them in a mixing bowl.
Gently mash the yolks with a fork and then stir in the mayonnaise, dijon mustard, pickle relish, salt and pepper until it’s well combined.
Carefully spoon or pipe the mixture into the center of each egg half. Top with the paprika, chopped bacon and chives.

Refrigerate the leftovers, covered, for up to 2 days.
Recipe Tips
Prepare Eggs - Prepare the hard boiled eggs in advance. Make sure they are cooked with a soft center. Peel the eggs and store in the fridge until ready to make deviled eggs.
Chilled Eggs - We think this recipe works best when starting with chilled eggs.
Sharp Knife - Slice the eggs with a sharp knife so that you have a clean cut. It also prevents the egg from breaking or tearing.
Divide Yolk Filling - You want to make sure that you are evenly adding the mixture to the egg whites.
Combining the Filling Ingredients - This recipe has been tested and approved with the way it is written. If you are adding seasoning, you may want to taste it to make sure additional ingredients need to be added.
Topping Eggs - We love the chopped bacon that is added. But garnishing with regular paprika always looks eye pleasing.
Cook the Bacon - I like to prepare the bacon in advance or use leftover bacon. You can always use store bought bacon such as bacon bits to top the eggs.
Variations Ideas
Change the Flavoring - Everyone has their own way of making deviled eggs. So feel free to tweak this recipe as you prefer. You can always substitute the pickle relish for apple cider vinegar or lemon juice.
Seasoning - We use simple seasoning to make this recipe. But you if you prefer you can add use smoked paprika, add in onion powder and more.
Cheese - For a delicious twist add in cheddar cheese to the yolk mixture.
Topping - When serving, you drizzle the top of the eggs with hot sauce or fresh parsley.
