Instructions
Preheat the oven to 425 degrees F.
Cut the 10 slices bacon in half crosswise to make 20 pieces.
Slice each of the 20 dates in half lengthwise and remove the pits.
Fill each date with approximately 6 ounces softened goat cheese, dividing the cheese evenly among all of the dates.
Press the dates back together around the goat cheese.
Wrap each stuffed date with one piece of the halved bacon and secure it with a toothpick.
Line a baking sheet with parchment paper or aluminum foil and arrange the bacon-wrapped dates in a single layer.
Bake for 8 to 10 minutes, or until the bacon begins to brown.
Carefully flip each date and bake for an additional 8 to 10 minutes, until the bacon is browned and cooked through on the other side.
Remove the baking sheet from the oven and let the dates rest for 5 minutes.
Sprinkle with fresh chopped parsley, if desired.
Serve warm and enjoy!
