Instructions
Preheat the oven to 425 degrees F.
Cut each slice of bacon in half. Cut each date lengthwise and remove the pit.
Spoon the goat cheese into each date, then press the date back together.
Wrap each date with a piece of bacon and secure with a toothpick.
Line a baking sheet with parchment paper or foil. Arrange the bacon wrapped dates on the baking sheet.
Bake for 8–10 minutes, until browned. Flip each date and bake for another 8–10 minutes, until the other side is browned.
Remove from the oven and let sit for 5 minutes.
Top with chopped parsley, if desired, and serve.
Notes
Refrigerate the leftovers in an airtight container for up to 5 days.
