Tips for Tender, Juicy Oven Baked Chicken Bites
Cooking Time - I use an instant read meat thermometer to make sure that the chicken is cooked through and to avoid over cooking the chicken.
Save Time - If you are short on time, you can use chicken tenders or have the butcher cut the chicken for you.
Prepare Seasoning - We love making Homemade Seasoning Blends which saves time and money. Prepare the seasoning blend ahead of time so you can quickly spread over the chicken.
Use Parchment Paper - Easy cleanup and prevents sticking when lining the baking dish with parchment paper.
Budget Friendly Tip - Double the recipe as leftovers reheat well for a quick lunch for the week.
Variations Ideas
Spices - This is a great base recipe and you can easily adjust the seasonings based on your preference, lemon pepper seasoning is one of my favorite seasonings. For Spicy Chicken Bites add 1/2 teaspoon of cayenne pepper or chili powder. Garlic Butter Chicken Bites is another great variation by tossing with melted garlic butter after baking and then top with parmesan cheese.
Change Chicken - I usually use chicken breasts for this recipe, but you can use boneless, skinless chicken thighs for this recipe.
Sauce - If you want more sauce with this recipe, you can top the chicken with 2 tablespoons of butter or ½ cup chicken broth or chicken stock before cooking and it will create a small sauce in the bottom of the pan. We have even drizzled BBQ Sauce to make BBQ chicken bites!
