This Beef and Noodle Casserole is loaded with savory ground beef, tangy tender noodles, and melty cheese baked to perfection. Cooks in 30 minutes for easy weeknight meal and make-ahead friendly!
Preheat oven to 350°F. Spray a 9x13-inch baking dish with cooking spray.
cook 12 oz egg noodles according to package directions until al dente. Drain.
In a large skillet over medium heat, cook 1 pound ground beef and 1 diced onion until the beef is browned and the onion is softened. Drain any excess grease. Add 2 teaspoons minced garlic to the skillet and cook for about 1 minute until fragrant.
Stir in 1 jar (24 oz) marinara sauce and 1 can (14.5 oz) diced tomatoes. Mix well. Season with 1 teaspoon Italian seasoning, 1 teaspoon salt, and ¼ teaspoon black pepper. Simmer for 5–10 minutes.
Combine cooked noodles with the meat sauce mixture, then transfer to baking dish.
Top with 2 cups shredded mozzarella cheese evenly over the casserole.
Bake for 20-25 minutes until cheese is melted and bubbly.
Let the casserole sit for 10 minutes and then it's ready to serve and enjoy!
