This Burrito Casserole layers seasoned ground beef, refried beans, tortillas, and a cheddar pepper jack blend with red enchilada sauce on top — all baked together for a hearty Mexican-inspired dinner the whole family will love. Just $2.09 a serving and ready in 30 minutes.
Stir together 2 cups shredded cheddar cheese and 1 cup shredded pepper jack cheese. Set aside.
Brown 1 pound ground beef with ½ chopped onion in a large skillet over medium-high heat until the beef is no longer pink. Drain off excess grease.
Add 1 packet taco seasoning, 1 can diced green chiles, and 1 can refried beans. Stir and heat until combined and heated through, about 3-4 minutes.
Remove from heat and stir in ½ cup sour cream.
Spray a 9x13 baking pan with non-stick cooking spray.
Layer 2 burrito size flour tortillas onto the bottom of the baking dish.
Spread half of the meat mixture over the tortillas, then top with 1 cup of the shredded cheese mixture.
Top with 2 more burrito size flour tortillas, the remaining meat mixture, and 1 more cup of the shredded cheese mixture.
Top with the remaining 2 burrito size flour tortillas.
Pour 1 can red enchilada sauce over the top and sprinkle with the remaining shredded cheese mixture.
Bake for 20 minutes, until heated through.
Remove from the oven and let sit for 5-10 minutes.
