These Cajun Chicken Sloppy Joes are spicy, saucy, and packed with bold Cajun flavor. A quick and easy weeknight dinner made with ground chicken, peppers, and a zesty homemade sauce!
Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-low heat until the butter is melted.
Add 1 finely diced onion and 1 finely diced green bell pepper. Sauté for 7–8 minutes until the vegetables are softened.
Add 1 pound ground chicken to the skillet. Break it apart with a spatula and cook for about 5 minutes until it begins to brown.
Sprinkle the chicken with 1–2 tablespoons Cajun seasoning and continue cooking for 3–5 minutes until the chicken is fully cooked.
Add 3 minced garlic cloves (or 1 tablespoon pre-minced garlic) and cook for 1 minute until fragrant.
Stir in 8 ounces tomato sauce, 1 tablespoon brown sugar, 1 teaspoon hot sauce (if using), and ½ teaspoon salt.
Reduce the heat to low and cook for 10–12 minutes, stirring frequently, until the sauce thickens and the flavors are well combined.
Spoon the Cajun chicken mixture evenly onto 4 hamburger buns.
Serve warm and enjoy!

Recipe Tips
Adding Cajun Seasoning - I start with 1 Tablespoon of the Cajun seasoning and then taste test it once it's done cooking and then you can add more based on the spiciness that you prefer. I ended up with about 1 1/2 Tablespoon of the Cajun seasoning in my batch and it was perfect.
Chopping Veggies - It's important that the onions and peppers are diced finely so that they blend well into the sloppy joes.
Thicken the Mixture - Simmer uncovered a few extra minutes.
Double the Recipe - This recipe scales well for crowds or meal prep.
