This Canned Sweet Potato Casserole is made with canned yams, butter, brown sugar, cinnamon, and vanilla, then topped with golden marshmallows and toasted pecans. It costs just $0.79 per serving and is one of the easiest Thanksgiving side dishes on the table.
Preheat the oven to 350°F. Lightly grease a 9x13-inch baking dish with nonstick cooking spray.
In a large mixing bowl, combine the drained yams, melted butter, brown sugar, egg, vanilla extract, cinnamon, nutmeg, and salt. Mash with a potato masher or beat with a hand mixer until mostly smooth, leaving a few small chunks if desired.
Spread the sweet potato mixture evenly into the prepared baking dish.
Bake for 25 to 30 minutes, or until the casserole is heated through and the center is set.
