This Carrot Salad is fresh and full of flavor! Made with simple ingredients like shredded carrots, green onions, and a light dressing. A perfect side dish for barbecues, holidays, or everyday meals!
Peel the carrots. Then shave the carrots by continuing to peel the carrots with a peeler until the carrots are shaved.
Place the shaved carrots in a medium size bowl. Stir in the chopped green onions and fresh parsley.
In a separate small mixing bowl, whisk together all the dressing ingredients until completely combined and blended.
Pour the dressing over the carrot mixture and stir until all the ingredients are coated with the dressing.
Refrigerate the salad for 20-30 minutes for the carrots to soak up the dressing.
Toss before serving and then it's ready to serve and enjoy!

Recipe Tips
Peeling Carrots - When peeling the carrots, make sure to stop peeling once you get to the core of the carrot as the inside of the carrot can be tough. We like using a julienne peeler to easily peel. But you can also use a food processor.
Add Crunch - Try chopped pecans, walnuts, or sunflower seeds.
Chill Salad - Allow time for the salad to soak up the dressing before serving. This will give the Carrot Salad the best flavors.
