This Carrot Salad is fresh and full of flavor! Made with simple ingredients like shredded carrots, green onions, and a light dressing. A perfect side dish for barbecues, holidays, or everyday meals!
Peel 1 pound carrots. Then shave the carrots by continuing to peel them with a vegetable peeler until all the carrots are shaved.
Place the shaved carrots in a medium size bowl. Stir in 2 tablespoons chopped green onions and 2 tablespoons chopped parsley.
In a separate small mixing bowl, whisk together 2 tablespoons extra-virgin olive oil, 2 tablespoons fresh lemon juice, 1 tablespoon honey, 1 teaspoon Dijon mustard, ½ teaspoon ground cumin, ¼ teaspoon salt, and ¼ teaspoon pepper until completely combined and blended.
Pour the dressing over the carrot mixture and stir until all the ingredients are coated with the dressing.
Refrigerate the salad for 20-30 minutes for the carrots to soak up the dressing.
Toss before serving and then it's ready to serve and enjoy!

Peeling Carrots - When peeling the carrots, make sure to stop peeling once you get to the core of the carrot as the inside of the carrot can be tough. We like using a julienne peeler to easily peel. But you can also use a food processor.
Add Crunch - Try chopped pecans, walnuts, or sunflower seeds.
Chill Salad - Allow time for the salad to soak up the dressing before serving. This will give the Carrot Salad the best flavors.
