Instructions
Preheat the oven to 400°F.
Rinse the cauliflower and cut it into bite-sized florets. Toss with the olive oil and spread evenly on a baking sheet.
Roast for 15–20 minutes, or until the cauliflower is fork-tender.
While the cauliflower is roasting, melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute.
Gradually whisk in the milk until smooth. Cook, stirring frequently, until the sauce is thickened and bubbly.
Stir in the salt and black pepper. Add 1 cup of the Gruyere or Swiss cheese and half of the cheddar cheese. Whisk until the cheese is melted and the sauce is smooth.
Toss the roasted cauliflower with the cheese sauce and transfer to a 2-quart casserole dish.
Top with the remaining Gruyere or Swiss cheese and cheddar cheese. Bake for 20–25 minutes, or until heated through and bubbly.
Broil for 1–2 minutes, or until the cheese is lightly browned. Watch closely to prevent burning.
