In a shallow bowl, stir together 1 cup graham cracker crumbs and 2 tablespoons granulated sugar until combined.
Gently poke 18 street taco-size flour tortillas with a fork 6-7 times each to help prevent air bubbles while baking.
Brush both sides of each tortilla with ? cup melted butter.
Press both sides of each buttered tortilla into the graham cracker mixture until evenly coated.
Turn a cupcake pan upside down. Fold each tortilla in half and place it between the cups of the pan so it holds a taco shell shape.
Bake for 10-11 minutes, or until the shells are lightly golden brown.
Allow the taco shells to cool completely in the pan before filling.
For the Filling:
In a large mixing bowl, beat together 8 ounces softened cream cheese, ? cup powdered sugar, and 2 teaspoons vanilla extract with a hand mixer or stand mixer until smooth.
Add 8 ounces thawed whipped topping and beat until the filling is light, smooth, and fluffy.
Refrigerate the filling for at least 30 minutes.
Transfer the chilled filling to a piping bag or a zip-top bag with one corner snipped off.
Pipe the filling evenly into the cooled taco shells.
Top each taco with 3-4 cherries and a spoonful of sauce from the 21-ounce can of cherry pie filling.
Serve immediately and enjoy!
Notes
If you cannot find the street taco size tortillas, cut soft taco size tortillas into 4 inch round circles with a cookie cutter or glass. Make sure that the cream cheese is at room temperature and has softened so that it mixes well with the other ingredients.
