In a medium bowl, whisk together ¼ cup white wine vinegar, 2 tablespoons orange juice, 1 tablespoon avocado oil, ½ teaspoon garlic powder, ¼ teaspoon cayenne pepper, ½ teaspoon paprika, ½ teaspoon salt, and ½ teaspoon black pepper.
Add 3 filleted chicken breasts and coat them evenly in the marinade. Refrigerate for at least 30 minutes or up to overnight.
Preheat the oven to 350 degrees F. Place the chicken breasts on a baking sheet and bake for 20-25 minutes until the chicken reaches an internal temperature of 165 degrees F. Once the chicken is cooked through, let it rest for 5 minutes on the baking sheet and then slice into thin strips.
While the chicken is cooking prepare the salads.
While the chicken is cooking, prepare the salad. In a large bowl, combine 9 cups mixed greens, 1 chopped large red bell pepper, 1 cup sliced grape tomatoes, ½ cup black beans, and ½ cup corn. Toss until evenly combined.
Divide the salad mixture among serving bowls. Top with the sliced chicken, 1 cup tortilla strips, 1 cup shredded Colby Jack cheese, ¼ cup pepitas if using, and ½ cup Southwest salad dressing.

You can grill the chicken if you prefer. You can also pre-make the chicken ahead of time and store it in an air tight container in the refrigerator for up to 3-4 days.I love serving my homemade Southwest Salad dressing on top but you can easily use store bough instead. This salad can easily be made with spinach or romaine lettuce instead of the mixed greens based on your preference.
