Ingredients

Instructions
In a large pot, melt 4 tablespoons butter over medium-high heat.
Reduce heat to medium and add 1½ pounds diced chicken. Cook for 10–12 minutes until browned and cooked through. Remove and set aside.
Add the remaining 4 tablespoons butter and melt over medium-high heat.
Add 1 diced green bell pepper, 1 diced onion, and 8 oz sliced mushrooms. Cook for 8–10 minutes until softened.
Stir in 3 cloves minced garlic (about 1 tablespoon) and cook for 30–60 seconds.
Add ½ cup flour, 1 teaspoon salt, and ½ teaspoon black pepper. Cook for 1–2 minutes.
Slowly stir in 2 cups chicken broth until smooth.
Add ½ cup white cooking wine, 1 cup heavy cream, 1 cup frozen peas, and 1 (4 oz) jar diced pimentos (drained). Return the chicken to the pot and stir.
Bring to a simmer and cook for 10–15 minutes until thickened and heated through, stirring occasionally.
Serve warm (optionally with biscuits) and enjoy!

Recipe Tips
Soup Consistency -
The mixture will thicken as it sets. If it gets too thick, you can thin it down with more chicken broth.
Cooking Times -
We like to have the dish simmer on low heat to create the best texture.
Large Dutch Oven -
We like to make this Chicken a la King in a large Dutch Oven but you can also make in a large skillet.
