Instructions
In a large pot, heat olive oil over medium-high heat. Add the chicken and cook until no longer pink, about 5 minutes. Remove to a plate and set aside.
In the same pot, add the onion and bell peppers. Cook for about 5 minutes, until softened. Add the garlic and cook for an additional 1 minute.
Return the chicken to the pot. Add the diced tomatoes, chicken broth, green chiles, fajita seasoning, cumin, chili powder, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15-20 minutes to let the flavors blend.
Stir in the lime juice just before serving for a fresh, tangy kick.
Ladle the soup into bowls and top with tortilla strips, cheese, sour cream, avocado, cilantro, or lime wedges, as desired. Enjoy!
