Instructions
Heat 2 tablespoons olive oil in a large pot over medium heat.
Add 2 pounds chicken breast cut into bite-sized pieces, 1 sliced large onion, and 3 sliced bell peppers. Cook until the chicken is browned and the vegetables begin to soften.
Stir in 1 tablespoon minced garlic and cook for 1 minute.
Add 2 cans diced tomatoes, 4 cups chicken broth, 1 can diced green chiles, 2 tablespoons fajita seasoning, 1 teaspoon ground cumin, 1 teaspoon chili powder, 1 teaspoon salt, and ½ teaspoon black pepper.
Bring the soup to a boil, then reduce the heat and simmer until the chicken is cooked through and the vegetables are tender.
Stir in the juice from 1 lime.
Serve warm with tortilla strips, shredded cheese, sour cream, avocado, cilantro, or lime wedges if desired.
