Everyone will love this Chocolate Peanut Butter Cups Recipe. Peanut butter and chocolate fans will go crazy over Easy Chocolate peanut butter cups. Yummy!
2full graham cracker sheets(crushed (or about 1/3 cup graham cracker crumbs))
½cuppeanut butter
3tablespoonslight corn syrup
16mini muffin liners
Instructions
Line a mini muffin pan with 16 mini muffin liners.
Melt the chocolate chips in a double boiler, stirring until smooth. (If you don't have a double boiler, place a heat-safe bowl over a saucepan with about 1 inch of simmering water, making sure the bowl doesn't touch the water.)
Spoon about 1 teaspoon of melted chocolate into each muffin liner. Use the back of the spoon to spread the chocolate slightly up the sides of each liner.
In a small bowl, stir together the peanut butter, graham cracker crumbs, and corn syrup until well combined. The mixture will be thick.
Roll the peanut butter mixture into sixteen 1-teaspoon balls. Flatten each slightly and place one in the center of each chocolate-filled liner.
Top each cup with another teaspoon of melted chocolate, spreading it to completely cover the peanut butter filling.
Refrigerate for about 1 hour, or freeze for 15–30 minutes, until the chocolate is firm.
Remove from the pan and enjoy! Store leftovers in an airtight container in the refrigerator.
Notes
These are very 'melty' but oh so yummy. You can also use coconut oil in the recipe if you prefer. Enjoy!
