Instructions
Place 40 ounces fresh strawberries and 16 ounces fresh cranberries in a food processor. If using frozen fruit, thaw it first. Pulse until the fruit is chopped into large pieces, but do not puree.
Transfer the fruit mixture to a large stockpot or Dutch oven.
Stir in 2 tablespoons orange zest, ½ teaspoon ground cinnamon, ½ teaspoon ground cloves, ¼ teaspoon ground allspice, and 4 pounds granulated sugar.
Bring the mixture to a boil over medium-high heat, stirring frequently. Once it reaches a full boil, continue boiling for 1 minute.
Remove the pot from the heat and stir in 6 ounces liquid fruit pectin. Return the mixture to a full boil and boil for 1 additional minute, stirring constantly.
Remove the pot from the heat and let it cool for 5–10 minutes. Skim any foam from the surface.
Ladle the jam into clean canning jars, leaving approximately ¼ inch of headspace at the top of each jar.
Wipe the jar rims clean with a damp cloth, place the lids on the jars, and tighten the bands.
Process the jars in a boiling water bath for 10 minutes.
Carefully remove the jars from the water bath and dry them with a clean towel. Let the jars sit undisturbed at room temperature for 12 hours.
Check that each jar has sealed properly. Refrigerate any jars that did not seal and use them within 1 month. Store sealed jars in a cool, dark place for up to 6 months. Refrigerate after opening.
