In a gallon-size zip-top bag or shallow dish, combine 2 Tbsp olive oil, Juice of 2 limes, ¼ cup chopped cilantro, 2 tsp minced garlic, 1 tsp salt, ½ tsp black pepper, 1 Tbsp honey, ½ tsp ground cumin and ½ tsp chili powder.
Add 2 lbs chicken breasts or chicken thighs to the marinade and turn to coat evenly.
Seal the bag or cover the dish and refrigerate for 2–12 hours.
Remove the chicken from the refrigerator 20–30 minutes before grilling.
Preheat the grill to medium-high heat (about 375–400°F).
Remove the chicken from the marinade and discard the remaining marinade.
Grill the chicken for 6–7 minutes per side, depending on thickness.
Cook until the chicken reaches an internal temperature of 165°F.
Transfer the chicken to a plate and let it rest for 5 minutes before slicing.
Garnish with additional fresh cilantro and lime wedges, if desired, and serve.
