Preheat the oven to 350 F (175 C). Spray a 9×9 baking dish with non-stick cooking spray.
Mix together the topping ingredients in a medium mixing bowl and set aside.
For the cake, whisk together the flour, baking, ground cinnamon and salt. Set aside
In a separate bowl beat together the butter and sugar until light and fluffy with an electric mixture.
Mix in the egg, milk and vanilla extract until combined.
Gently mix the dry ingredients into the wet ingredients until just combined. Be careful not to overtax the batter.
Pour half of the batter in the prepared baking dish. Sprinkle half of the topping on top.
Top with the remaining cake batter and the remaining streusel topping.
Bake at 350 F for 35-40 or until the toothpick inserted in the center comes out clean.
Let the cake cool for 5-10 minutes and then it’s ready to slice, serve and enjoy!
Notes
Store any leftover cake in an airtight container for up to 1 week. I like to reheat the cake in the microwave for 10-15 seconds before enjoying the leftovers.
