Cornbread Casserole
This Cornbread Casserole is made with Jiffy corn muffin mix, whole kernel corn, creamed corn, sour cream, and melted cheddar — moist rich and just $1.22 a serving. The easiest one bowl side dish that belongs on every holiday and weeknight dinner table.

Ingredients
- ¾ Butter melted
- 2 cans Whole Kernel Corn drained
- 1 can Creamed Corn not drained
- 2 cups Sour Cream
- ¼ cup Granulated Sugar
- ½ teaspoon Kosher Salt
- 2 boxes Jiffy Corn Muffin Mix
- 2 Large Eggs
- 2 cups Shredded Cheddar Cheese
Instructions
- Preheat the oven to 350 degrees and spray a 9X13 baking dish with a non-stick spray.
- In a large mixing bowl, combine all the ingredients except for the cheese until well combined.
- Gently stir in the shredded cheddar cheese.
- Pour into the baking dish.
- Bake for 55-65 minutes until set and a toothpick inserted into the center of the cornbread comes out clean.
- Let cool for 5-10 minutes and then it’s ready to serve and enjoy!
