Peel and dice the potatoes into bite-size pieces. Boil for 7–11 minutes, or until fork tender. Drain well.
Melt 2 tablespoons of the butter in a large skillet over medium-high heat.
Add the onion, potatoes, salt, and pepper. Sauté for 8–10 minutes, stirring occasionally, until the onion is tender and the potatoes begin to brown.
Add the chopped corned beef, minced garlic, Worcestershire sauce, and remaining 2 tablespoons of butter. Stir until combined and the butter has melted.
Spread the mixture into an even layer and gently press it into the skillet with a spatula.
Cook without stirring for 3–4 minutes, allowing the bottom to brown and form a crust.
Flip the hash in sections and cook for another 3–4 minutes, or until browned on the other side. Add additional butter if needed to prevent sticking or burning.
Top with chopped fresh parsley and serve warm.
Notes
Refrigerate the leftovers in an airtight container for up to 3-4 days. Yukon Gold Potatoes can be used in this recipe instead of Russet potatoes.
