This Cottage Cheese Bread is easy, delicious, and a great way to add more protein to your diet without sacrificing comfort or flavor. Whether you go savory or sweet we are sure that you'll make it again and again.
Preheat the oven to 350 degrees Fahrenheit and line a 9x5 inch loaf pan with parchment paper.
Add 2 cups old fashioned rolled oats to a large food processor or blender and blend until the oats become a fine powder.
Add 2 cups cottage cheese, 1 tablespoon ground flax seed, 4 large eggs, 2 tablespoons olive oil, 1 tablespoon baking powder, and 1 teaspoon salt to the food processor or blender. Blend until the mixture is smooth and fully combined.
Pour the batter into the prepared loaf pan.
Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool completely in the pan on a wire rack.
Carefully remove the bread from the pan by lifting the parchment paper.
Slice, serve, and enjoy!

You don’t have to spray the parchment paper. Just pour the batter directly into the pan on top of the parchment paper and it should be easily removed from the pan. Any oil will work in this recipe. Wrap any leftovers in plastic wrap and refrigerate for up to 5 days. Full fat cottage cheese works the best in this recipe for the best flavor and consistency of the bread.
