This Cottage Cheese Bread is easy, delicious, and a great way to add more protein to your diet without sacrificing comfort or flavor. Whether you go savory or sweet we are sure that you'll make it again and again.
Preheat the oven to 350 degrees F and line a 9X5 inch loaf pan with parchment paper.
Blend the old fashioned oats in a large food processor or blender until they are a fine powder.
Add in the cottage cheese, flax seed, eggs, olive oil, baking powder and salt into the food processor or blender. Blend until combined and smooth.
Pour this mixture into a prepared loaf pan and bake for 60-70 minutes until a toothpick inserted into the center of the bread comes out clean.
Allow the bread to cool completely in the pan on a wire rack.
Carefully remove the bread from the pan by lifting the parchment paper. Then the bread is ready to slice, serve and enjoy!

You don’t have to spray the parchment paper. Just pour the batter directly into the pan on top of the parchment paper and it should be easily removed from the pan. Any oil will work in this recipe. Wrap any leftovers in plastic wrap and refrigerate for up to 5 days. Full fat cottage cheese works the best in this recipe for the best flavor and consistency of the bread.
