Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
Scoop 1 cup small curd cottage cheese onto the baking sheet in heaping tablespoon portions, spacing them at least 1 inch apart. Gently flatten each portion with the back of a spoon so they spread evenly.
If using the optional seasonings, sprinkle 1 teaspoon kosher salt and 2 teaspoons Everything but the Bagel seasoning evenly over the tops of the cottage cheese portions.
Bake for 22-25 minutes until the chips start to brown around the edges. Start checking the chips after 22 minutes and then continue to check them every 2 minutes until the chips are golden brown around the edges. Watch them closely while they are cooking as they will brown very quickly.
Let the chips cool completely on the baking sheet and then they are ready to remove and enjoy!

Notes
Make sure that the chips are approximately the same size so that they cook evenly when baking. I recommend using full fat cottage cheese for this recipe. Make sure to drain any excess liquid off of the cottage cheese before adding it to the baking sheet.
