Make Cottage Cheese Cookies for a soft, high-protein cookie that everyone will love! These cookies are made with only 6 ingredients and are easy to make.
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Blend 1 cup cottage cheese and 1 large egg in a blender or food processor until smooth.
Pour the mixture into a bowl and add ? cup monk fruit sweetener, 1 cup almond flour, and ¼ cup vanilla protein powder. Stir until fully combined.
Gently fold in ¼ cup sugar free chocolate chips.
Use a medium cookie scoop (about 2 tablespoons) to form dough balls and place them on the prepared baking sheet.
Bake for 15–20 minutes, until the edges are slightly golden brown.
Allow to cool for 5 minutes, then transfer to a wire rack to cool completely. Serve and enjoy!
Notes
I used Lilly's No Sugar Added Chocolate Chips.Depending on the type of protein powder you use, you may need to add almond milk to thin it out or more almond flour to thicken it. I used a plant based protein that soaks up more moisture as compared to a whey based protein.Store the cookies inside an airtight container for up to 3 days or in the fridge for up to 7 days. For longer storage, place inside a freezer container up to 3 months.
