Cottage Potatoes is the ultimate side dish. This is one of our favorite comfort foods and it is loaded with flavor. Perfect for a potluck or a holiday dinner.
Place the potatoes in a large pot and cover with water. Bring to a boil and cook for 10 to 15 minutes, or until the potatoes are fork tender.
Drain the potatoes and return them to the pot.
Add 2 tablespoons butter, ½ teaspoon salt, and 1 teaspoon pepper to the potatoes. Using an electric mixer or potato masher, mash the potatoes until they reach your desired consistency.
Stir in 1 cup cottage cheese and ½ diced onion until evenly combined.
Transfer the potato mixture to a 9x9-inch baking dish.
Slice the remaining 2 tablespoons butter into thin pieces and place them evenly over the top of the potatoes.
Sprinkle ½ teaspoon paprika evenly over the top.
Bake uncovered for 30 minutes.
Remove from the oven and let stand for 10 to 15 minutes before serving.
