Ingredients

large Russet Potatoes

Cottage Cheese

Onion

Instructions
Clean, peel, and quarter the potatoes.
Preheat the oven to 350°F.
Place the potatoes in a large pot and cover with water. Bring to a boil, then simmer for 10–15 minutes, or until fork-tender.
Drain the potatoes and return them to the pot.
Add 2 tablespoons of the butter, salt, and pepper. Beat with an electric mixer until light and fluffy, or mash to your preferred consistency.
Stir in the cottage cheese and onion.
Spread the mixture in a 9 × 9-inch baking pan. Thinly slice the remaining 2 tablespoons butter and arrange evenly on top. Sprinkle with paprika.
Bake uncovered for 30 minutes.
Let rest for 10–15 minutes before serving warm.
Notes
Refrigerate the leftovers in an airtight container for 5-7 days.
