Move oven rack to middle position and preheat to 350°F.
Roll out 1 can (8 oz) crescent rolls onto a baking sheet. Pinch seams together to form a rectangle and bake for 7–8 minutes until golden brown.
Transfer to a wire rack and cool completely, about 40 minutes.
In a small bowl, mix 16 oz sour cream with 1 packet ranch seasoning mix until well combined.
Spread the mixture evenly over the cooled crust.
Sprinkle 1 cup diced cauliflower, 1 cup diced broccoli florets, ½ cup diced carrots, ¼ cup diced red bell pepper, and 2 tablespoons diced onion evenly over the top. Press lightly into the sour cream layer.
Slice into 24 pieces and serve immediately or refrigerate until ready to serve.
