Season the 6 bone-in, skin-on chicken thighs with salt and pepper to taste.
In a medium bowl, whisk together 1 cup BBQ sauce, 2 tablespoons honey, 2 teaspoons apple cider vinegar, 2 cloves minced garlic, ½ teaspoon smoked paprika, ¼ teaspoon onion powder, and ¼ cup chicken broth until well combined.
Place the seasoned chicken thighs in the Crock Pot.
Pour the BBQ sauce mixture evenly over the chicken, making sure all of the chicken is coated.
Cover and cook on High for 4 hours or on Low for 6 hours, or until the chicken is tender and reaches an internal temperature of 165°F.
Preheat the oven broiler.
Transfer the chicken thighs to a baking sheet. Brush the tops with additional sauce from the Crock Pot.
Broil for 3-5 minutes, watching closely, until the skin is browned and crispy.
Serve warm with extra BBQ sauce, if desired.

Sauce Consistency: The sauce should be thin enough to easily coat the chicken but not too watery. The added water or chicken broth helps to achieve the right consistency.Cooking Time: Cooking on low for 6 hours tends to yield more tender results.
