Crock pot beef curry recipe turns inexpensive beef into a tender and delicious meal full of flavor. The curry sauce is amazing over rice and easy to make.
Place 2 to 3 pounds beef chuck roast, cut into chunks, and ½ large chopped yellow onion in the crock pot.
In a small bowl, whisk together 1 cup beef broth, 1 can (8 ounces) tomato sauce, 1 tablespoon minced garlic, ½ teaspoon salt, ½ teaspoon black pepper, 1½ tablespoons yellow curry powder, and 1 tablespoon garam masala.
Pour the sauce mixture over the beef and onions in the crock pot.
Cover and cook on Low for 8 hours, or until the beef is tender and easily falls apart.
Stir the beef mixture before serving.
Serve over cooked rice, if desired.
Garnish with chopped red onion and fresh cilantro before serving.
